Try these delicious rock cakes with a cuppa or as a handy on-the-go breakfast! Packed with prebiotic-rich ingredients such as carrots, fruit, oats, nuts and seeds, they will help feed the beneficial bacteria in your gut microbiome!
Ingredients – makes 12
- 100g grated carrot
- 100g mixed dried fruit
- 40g brown sugar
- 1 TBSP maple syrup or honey
- 100g wholemeal flour
- 60g butter
- 50g ground almonds/ground seeds
- 1/2 TSP bicarbonate of soda
- 100g oats/amaranth/quinoa flakes
- 1 large egg
- 1 tsp cinnamon
Method
- Gently melt the butter in a saucepan and add the sugar and syrup.
- Leave to cool and beat in the egg.
- Grate the carrot into a mixing bowl and add the oats, dried fruit, ground nuts/seeds and cinnamon. Stir well.
- Add the flour and bicarb of soda and mix well.
- Mix the wet and dry ingredients together.
- Using a dessert spoon, divide the mixture into 15 and roll into balls.
- Place on a lined baking tray and bake at 180oC for 15-17 minutes or until golden.
- Allow to cool for a few minutes and enjoy!
