Fibre-rich rock cakes

Try these delicious rock cakes with a cuppa or as a handy on-the-go breakfast! Packed with prebiotic-rich ingredients such as carrots, fruit, oats, nuts and seeds, they will help feed the beneficial bacteria in your gut microbiome!

Ingredients – makes 12

  • 100g grated carrot
  • 100g mixed dried fruit
  • 40g brown sugar
  • 1 TBSP maple syrup or honey
  • 100g wholemeal flour
  • 60g butter
  • 50g ground almonds/ground seeds
  • 1/2 TSP bicarbonate of soda
  • 100g oats/amaranth/quinoa flakes
  • 1 large egg
  • 1 tsp cinnamon

Method

  1. Gently melt the butter in a saucepan and add the sugar and syrup.
  2. Leave to cool and beat in the egg.
  3. Grate the carrot into a mixing bowl and add the oats, dried fruit, ground nuts/seeds and cinnamon. Stir well.
  4. Add the flour and bicarb of soda and mix well.
  5. Mix the wet and dry ingredients together.
  6. Using a dessert spoon, divide the mixture into 15 and roll into balls.
  7. Place on a lined baking tray and bake at 180oC for 15-17 minutes or until golden.
  8. Allow to cool for a few minutes and enjoy!
