Ingredients
Serves 8 (or split and freeze half)
- 2 TBSP olive oil
- 2 white onions (chopped)
- 3 garlic cloves (minced)
- 2 peppers (red & yellow) (chopped)
- 2 400g chopped tomatoes
- 1 400g black beans
- 1 400g kidney beans
- 1 400g pinto beans
Spices:
- 2 TBSP Italian mixed herbs
- 2 TBSP ground cumin
- 2 TBSP smoked paprika
Method
- Heat the oil at a medium heat, once warmed keep heat on low.
- Add the chopped onion and minced garlic, and cook for 5 minutes until soft.
- Mix in all the spices to coat the onion and garlic.
- When the spices are fragrant, tip in all the beans and mix everything together.
- Add the two tins of chopped tomatoes.
- Turn heat to high and bring to a simmer, stirring every 15 minutes.
- Once simmering, turn to low and cover for an hour, stirring often to ensure nothing sticks to the bottom.
- Serve with rice.
- If freezing half – let cool and store in freezer proof container.
- Extra options: cheese, avocado, sour cream.
