This zingy, French-style salad dressing is a great way to add heart-healthy nutrients to your salads and wraps. Not only does it contain lots of anti-inflammatory ingredients, including antioxidant-rich herbs, but the olive oil also enhances the absorption of the fat-soluble vitamins A, D, E, and K in your salad veggies.
Ingredients:
150ml extra virgin olive oil
50ml fresh lemon juice
15ml Vinegar No. 2 or plain apple cider vinegar
1 – 2 TSP mixed dried herbs (oregano, thyme, rosemary)
1 TSP ground turmeric
1/4 TSP honey
Pinch of sea salt and black pepper to taste
(You can adjust any of these ingredients according to your taste)
Method:
Mix all the ingredients together and store in a glass jar in the fridge. The oil may solidify so you may need to bring it out of the fridge ahead of time and give it a good shake!

Turmeric, oregano, thyme, and rosemary have extremely high levels of antioxidants, much more than fruits, vegetables, and nuts. A little goes a long way – half a teaspoon here or a pinch there will vastly increase the anti-oxidant value of your meal!
