Braised Christmas cabbage

This fibre-rich festive side dish is simple to make, great for your gut health, and can be prepared in advance – anything to make Christmas morning as stress-free as possible!

Ingredients

  • 500g red cabbage, shredded
  • 1 red onion, thinly sliced
  • 1 cooking apple, peeled, thinly sliced (core removed)
  • 1 TSP ground mixed spice
  • Zest of 1 orange
  • 50g brown sugar
  • 2 TBSP apple cider vinegar
  • 150ml dry cider
  • 20g of butter
  • Pinch of salt and pepper

Method

  1. Remove the outer leaves from the cabbage and discard. Cut the cabbage into quarters and remove the stem. Slice by hand or in a food processor.
  2. Place the cabbage in a large mixing bowl with the sliced onions and apples.
  3. In a jug mix the cider, mixed spice, zest, sugar, and vinegar, and pour over the cabbage.
  4. Place in an oven-proof dish or slow cooker. Dot the butter on top.
  5. Cover with a lid and cook for 1 1/2 hrs until tender in the oven at a gas mark of 160°. Alternatively, cook for 4-5 hours in a slow cooker on low.
  6. This dish will keep in the fridge, covered, for up to three days or in the freezer for up to two months. Reheat in a pan or the microwave.
