Bubble & Squeak

Step into the post-festivity calm and give new life to those delightful holiday leftovers. Embrace the flavour of yesterday’s feast with this deliciously indulgent yet nutritious Bubble and Squeak recipe. Transforming leftovers into a hearty delight is the perfect way to savour the warmth of the season even after the festivities have passed.

Bubble and squeak is a traditional British dish typically made with leftovers from Christmas dinner – or a Sunday roast. The main ingredients are often mashed potatoes and cabbage although other vegetables such as Brussels sprouts, carrots, or peas may also be included. The name “bubble and squeak” is believed to originate from the sounds the dish makes while cooking – bubbling and squeaking.

This versatile dish is a great way to reduce food waste by using up your festive leftover vegetables and can be made as one big dish or individual patties.

Ingredients

  • 1 TBSP fat (butter, duck fat, goose fat – whatever you have in)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 500g cooked potato (skin on for extra fibre), mashed
  • 500g leftover cooked vegetables (sprouts, carrots, cabbage, peas etc.), diced
  • A few sprigs of rosemary and thyme (optional)
  • Salt and pepper to taste
  • To serve (optional) – bacon, sausages, poached egg, brown sauce – the options are endless!

Method

  1. Heat the oil/fat in a pan and gently fry the onion and garlic for 2-3 minutes until softened.
  2. Add in the chopped vegetables and cook for 5 minutes until lightly browned.
  3. Add in your mashed potato, mix well, and press down so that the mixture is covering the pan evenly. 
  4. Leave to “bubble” and “squeak” (cook) for 5 minutes or until the underlayer has started to brown. 
  5. Turn it over and cook on the other side for 5 minutes.  Don’t worry if it breaks in the turning process – simply press it back together!
  6. Serve it alone or with a side of crispy bacon and sausages, topped with poached egg and brown sauce. Enjoy!
