Festive chocolate tiffin

Kickstart your New Year celebrations with this festive, nourishing and deliciously indulgent tiffin recipe!

Serves 10 – 20 depending on your portion size!

Ingredients

  • 125g butter
  • 3 TBSP honey
  • 5 heaped TSP cacao (note – not cocoa)
  • 180g biscuits (digestive, rich tea), crumbled and crushed
  • 75g nuts (pecans, pistachios, almonds), roughly chopped
  • 30g raisins
  • 50g dried cranberries
  • Zest and juice of 1 large or 2 small oranges
  • 200g dark chocolate

Methods

  1. Melt the butter in a saucepan over a gentle heat. Stir in the honey, cacao and orange juice and combine well.  Remove from the heat.
  2. Crumble the biscuits in a large bowl – you want a mixture of powder as well as chunks for texture.  Add the biscuits, chopped nuts, raisins, cranberries and orange zest (preserve a little for decoration) into the mix and combine well. 
  3. Line a 20cm baking dish with greaseproof paper and pour your mixture in.  Press it down well with the back of a large spoon until compact and smooth.
  4. Melt the chocolate in a bowl and pour over the mixture, smoothing out so the base is completely covered. Sprinkle over a little orange zest (nuts and cranberries too if you wish) and leave to cool for a couple of hours in the fridge before chopping up and serving.
