Oat pancakes, crepe style!

Happy Pancake Tuesday, one of my favourite days of the year!

This recipe combines the heartiness of oats with the irresistible lightness of traditional pancakes, creating a satisfying treat that’s as nutritious as it is indulgent. Whether you’re celebrating Pancake (Shrove) Tuesday or simply craving a delicious breakfast or brunch option, these oat pancakes are guaranteed to please.

Why oats? Oat flour is packed with nutrients like fibre, protein, vitamins, and minerals, making oat pancakes a healthier option. With its lower glycemic index, oat flour helps stabilize blood sugar levels and promotes heart health. The fibre content supports digestion and provides a satisfying, filling breakfast option. For those with gluten sensitivities, oat flour offers a delicious gluten-free alternative, ensuring that everyone can enjoy the goodness of pancakes without compromise.

Ingredient

Serves 6 pancakes

  • 60 g oat flour (oats blended into a powder)
  • 180 ml goat’s milk (or milk of choice)
  • 2 eggs
  • Olive or coconut oil (for frying)
  • Toppings of choice (fruit, honey, yoghurt, chocolate, etc.)

Method

  1. Beat the eggs in a large bowl.
  2. Add the milk to the eggs and mix further.
  3. Begin whisking the mixture using a hand blender or a whisk, and gradually add the oat flour.
  4. Continue mixing until all lumps are gone and you have a smooth, thin batter.
  5. Add a little oil to a saucepan and bring to a medium heat.
  6. Pour a thin layer of the batter onto the pan and swirl until the surface of the pan is covered in a thin layer.
  7. Cook for 2-3 minutes or until you see a golden/brown appearance and then flip. Repeat on the other side.
  8. Repeat until all pancakes are cooked. The batter makes about 6 pancakes.
  9. Add your toppings and enjoy!
